1. How do I order Prospect Farm meat?
It's as simple
as A,B,C!!
A. Online: Click on the "Our Meat" link for our online
catalog. Select your favorite cuts of meat. Add them to your cart. Follow
instructions to final secure checkout using your credit card.
B. Fax:
You can fax your order by filling up your shopping cart and selecting "Fax In
Order" as your payment method. Print out the Order Summary and fax it to (518)
398-7401. Be sure to include credit card information and your signature. Make
sure the biling and shipping info on the printed summary is correct. You will
receive a confirmation fax within 24 hours. Your credit card will not be billed
until the day of shipment. You will receive a final fax on that day including
you UPS tracking #.

2. How are Prospect Hill Farms meats shipped?
We
ship our meat in extra thick insulated containers with advanced cooling gel
packs or dry ice. Our meat is freezer wrapped and will keep up to one year in
the freezer. All orders are shipped via UPS 3-Day Select on Mondays &
Tuesdays. |

3. When does Prospect Hill Farm ship?
We ship Monday
and Tuesday of every week. We ship UPS 2 Day Select when possible. Our goal is
to get you your meat in 2-3 days at the lowest possible cost. We can work with
you in any event to meet your needs. |

4. How does freezing effect the taste of our meat?
Our honest answer is we can't tell the difference. But the battle
still rages between fresh and frozen meat companies. At prospect Hill Farm, if
you have got to have it fresh, terrific! We will be happy to work with
you. |

5. What is the best way to thaw frozen meat?
We
strongly recommend thawing meat in the refrigerator. Place meat in the
refrigerator 24 hours before you want to serve - larger cuts may take up to 7
hours per pound. |

6. Can I order fresh meat?
Absolutely, all fresh
meat orders are special orders. They will be shipped overnight on the day after
they are butchered, or can be picked up at the farm. Ordering fresh meat can
require up to three weeks of lead time or as little as 2 days depending where
we are in the cycle. Please call for more details. |

7. What is dry aging?
After slaughter the carcass is
hung in a cooler for 2-3 weeks where temperature air flow and humidity are
carefully controlled. This process adds to the flavor and texture of the meat.
Many producers have abandoned this process because of the time and expense
involved. We believe it is critical to a superior finished product. |

8. Does Prospect Hill Farm grade its meat?
No, but
you should compare our meat to the finest Prime and Choice cuts you receive
from your supermarket, butcher or restaurant. Meat grading is a voluntary
program of the USDA. It is a way to differentiate quality by measuring marbling
at a specific part of the animals rib cage. The truth is, how a piece of meat
tastes is much more complex than that. Our meat has a full rich flavor and
marbles naturally. We trust once you eat it you will give it your highest
grade. |

9. What is the difference between all natural and organic?
Organic standards require that all the feed our animals eat is
certified organic. We use a locally grown custom blend of grains to supplement
our animals grass fed diet which is not certified organic. Our feed contains NO
hormones, NO antibiotics and NO animal by products ever - similar to the
organic standard. |

10. What are the health advantages of grass fed beef?
Grass fed beef has been shown to contain much higher levels of
vitamin A and E than commercial beef. It's rich in beta-carotene and conjugated
linoleic acids - both major cancer inhibitors. It also has high levels of Omega
3's - fatty acids that can reduce cholesterol and fight heart disease. |

11. Why does Prospect Hill Farm supplement its animals with a
custom blend of locally grown grains?
First, it's better for our
animal's health. Growing calves benefit from a protein supplement to aid in
their skeletal and muscular development. In the winter they need more fuel
period. Our custom blend of locally grown grains help them grow healthy and
strong. Remember 90% of our animals diet is the grass from our farm. Second,
grass fed, grain finished animals taste better. They have the richness and
flavor of their grass fed counterparts and the marbling and tenderness of
traditional Prime and Choice Beef. To us it is a question of balance - a
healthy and a great tasting product. |

12. Can I order split sides or full sides of Prospect Hill
beef?
Yes, a split side is ¼ steer and a side is a ½
steer. You receive a significant discount when you order a side or a split
side. You will receive a cutting sheet and your meet will be custom butchered
the way you want it. A full side will feed a family of 5 for a year. It
requires 12 cubic feet of freezer space. Call, e-mail or fax us for pricing and
